The sweetness of fruits is not always enough, and we basically did not want to use sweeteners common in the world of food production in the development of bars. The choice fell on Jerusalem artichoke juice, now we’ll tell you why.
Firstly, the juice of these root crops is neutral in taste, but gives the necessary sweetness. And this is exactly what was needed for our fruit bars based on sea buckthorn and pumpkin.
Secondly, Jerusalem artichoke tubers are much more valuable than most vegetables in terms of nutritional properties. Their composition makes it possible to enrich the product with benefits that will be accepted by the body and will not harm it — this is also an important point for us, because we were just preparing the PASTILATA line for children.
A bit of theory
Jerusalem artichoke tubers contain up to 3% protein, mineral salts, soluble polysaccharide inulin (from 16 to 18%), fructose, trace elements, 2–4% nitrogenous substances. Quite rich in vitamin B1, contain vitamin C, carotene.
Due to its composition, the use of juice from this root crop has a hypotensive, diuretic, choleretic, antitumor, tonic, antiulcer effect. Its use for therapeutic and prophylactic purposes allows:
