Jerusalem arti­choke tubers con­tain up to 3% pro­tein, min­er­al salts, sol­u­ble poly­sac­cha­ride inulin (from 16 to 18%), fruc­tose, trace ele­ments, 2–4% nitroge­nous sub­stances. Quite rich in vit­a­min B1, con­tain vit­a­min C, carotene.

The fol­low­ing com­po­nents are of par­tic­u­lar val­ue in its com­po­si­tion:
