The sweet­ness of fruits is not always enough, and we basi­cal­ly did not want to use sweet­en­ers com­mon in the world of food pro­duc­tion in the devel­op­ment of bars. The choice fell on Jerusalem arti­choke juice, now we’ll tell you why.

First­ly, the juice of these root crops is neu­tral in taste, but gives the nec­es­sary sweet­ness. And this is exact­ly what was need­ed for our fruit bars based on sea buck­thorn and pump­kin.

Sec­ond­ly, Jerusalem arti­choke tubers are much more valu­able than most veg­eta­bles in terms of nutri­tion­al prop­er­ties. Their com­po­si­tion makes it pos­si­ble to enrich the prod­uct with ben­e­fits that will be accept­ed by the body and will not harm it — this is also an impor­tant point for us, because we were just prepar­ing the PASTILATA line for chil­dren.

Jerusalem arti­choke tubers con­tain up to 3% pro­tein, min­er­al salts, sol­u­ble poly­sac­cha­ride inulin (from 16 to 18%), fruc­tose, trace ele­ments, 2–4% nitroge­nous sub­stances. Quite rich in vit­a­min B1, con­tain vit­a­min C, carotene.

The fol­low­ing com­po­nents are of par­tic­u­lar val­ue in its com­po­si­tion:
• argi­nine — improves immu­ni­ty, stim­u­lates the pro­duc­tion of growth hor­mone, has a reju­ve­nat­ing effect;
• his­ti­dine — helps to cope with ane­mia, aller­gic reac­tions, increas­es cell regen­er­a­tion.
• valine — has a seda­tive effect, improves tis­sue syn­the­sis;
• lysine — improves growth, pro­motes the con­ver­sion of fat into ener­gy;
• tryp­to­phan — improves sleep, copes well with increased fatigue;
methio­n­ine — low­ers blood cho­les­terol lev­els.

Due to its com­po­si­tion, the use of juice from this root crop has a hypoten­sive, diuret­ic, choleretic, anti­tu­mor, ton­ic, antiul­cer effect. Its use for ther­a­peu­tic and pro­phy­lac­tic pur­pos­es allows:

• cleanse the body of tox­ins;

• stim­u­late the immune sys­tem;
